COFFEE INTERFERENCE INTO THE SERUM LIPIDAEMIC SYSTEM
Abstract
According to recent studies there seems to be a significant positive relationship between coffee consumption and serum cholesterol leνels, and coffee may therefore contribute to the risk of coronary heart disease. Brewing method is considered to be responsible for this hypercholesterolaemic effect, since it has been proved that consurnption of boiled but not of filtered coffee leads to a significant increase in the serurn total and LDL cholesterol concentrations. Filtered coffee does not affect serurn lipid profile.
Possible mechanisms by which differences in brewing methods cause different effects on serum lipid levels are discussed in this article. It is, also, speculated that produces of similar methods of brewing, such as Greek coffee, might have the same results as boiled coffee as well.
